A Practical Measurement of Water Hydration Capacity of Protein Materials.

This method for measuring water hydration capacity of protein materials differs from conventional techniques in that only enough water to saturate the material is used. Unlike conventional techniques that involve excess water, this method is not affected by water solubility of the test material. The method is simple and highly reproducible.
