Grits from Grain Sorghum Dry Milled on Roller Mills.

Dry milling sorhum with a prebreak system produced grits with lower fat and ash contents than those in grits produced without a prebreak. As temper moisture increased, the yields of bran and fines (-30LW) increased and the quantity of grits decreased. The optimum tempering treatment for the production of grits with maximum yield and low fat content was 17% moisture and 8 hr of tempering.
