It is economically important for a food manufacturer to ensure that the quality of mixing/coating processes in a large facility is the same as that experienced in a smaller, testing facility. Equations used for scale-up often do not account for the fact that increased work energy results in product breakage. By adjusting the equations, one can find a compromise between quality of coating and level of product damage.
