Technical Committees Progressing
As this newsletter reaches your in boxes, all of AACCI technical committees are fully engaged in their work projects. Some are completing new method approvals, others are confirming speakers for symposia and workshops for the 2015 Centennial Meeting, which marks 100 years of cereal science innovation with AACC International. Plan now to join us in Minneapolis in October for what promises to be a bumper crop of new technical insights.

New Methods and Guidelines

New Method Approved for Measuring Bread Volume by Laser Topography
A new method for determining bread volume using BVM laser topography (AACCI method 10-14.01) was assessed through a collaborative study conducted by the AACCI Physical Testing Methods Technical Committee and approved by the Approved Methods Technical Committee. Users can apply this method when using laser topography to determine bread volume. The method is applicable to round, elongated, and rectangular leavened bread products with volumes of 200–2,800 mL. It overcomes many limitations identified in earlier methods. This BVM method is objective, contact-free, rapid, and simple to perform, making it well suited to the requirements of the milling and baking industries.

New Udon Noodle Guideline Reaches Final Approval
The AACCI Asian Products Technical Committee recently approved new guidelines for the laboratory preparation of Japanese udon noodles. Guidelines for Making and Cooking Japanese Udon Noodles (AACCI method 66-60.01), has been approved by AACCI Approved Methods Technical Committee. It was developed based on the original Japanese method to offer general guidelines on udon noodle processing protocols for product developers and other food scientists. Technical Committees Organize Workshops on Proficiency Data, Nutritional Labeling
Paul Wehling, Tom McKamey, Jonathan DeVries and other active technical committee members will hold two workshops at the AACCI Centennial Meeting in Minneapolis this October. The first, titled “How to be a ‘Savvy Consumer’ of Proficiency Data in the Next Generation,” covers the various aspects of a quality management system, including use of AACCI Check Sample Series, calibration, measurement uncertainty, statistical approaches, and more. The second workshop, “Trends in Nutritional Labeling,” discusses nutritional labeling regulation updates; the latest food health claims, such as high protein, gluten free, good source of fiber; substantiating nutrient content, and more. 350-plus Method Abstracts Undergoing Review and Revision
To enhance clarity and ensure you can more easily find the right methods easily within AACCI’s Approved Methods of Analysis, the Approved Methods technical committees are drafting, undergoing reviews and, in some cases, employing revisions of more than 350 abstracts associated with each method.

Chemical Leavening Committee Developing New Guidebook

The Chemical Leavening Committee is completing an outline for a technical guidebook on chemical leavening agents, including various bicarbonates, phosphates, acids, and others. For each leavening agent, the book will discuss manufacturing processes, specifications and grades, factors influencing rate of reaction, CO2 release mechanisms, storage and handling, regulatory considerations, and other key items of interest to food scientists.

Get Involved with a Technical Committee at the AACCI Annual Meeting
The AACCI Centennial Meeting in Minneapolis is fast approaching, and it’s the perfect time to get involved with the Approved Methods Technical Committees. Join the hundreds of individuals who have served on these committees. Anne Bridges, AMTC Chair, and all 23 technical committee chairs sincerely thank the many individuals who spent their valuable time during the past year ensuring that we produce high-quality, accurate methods of analysis. GMO Detection Methods Workshop
Members of the AACCI Molecular Biomarkers for Grain Technical Committee provided a training workshop in Trinidad and Tobago in collaboration with the University of the West Indies and United Nations Development Programme and Global Environment Fund (UNEP/GEF). The goal of the workshop was to train the Caribbean Community (CARICOM) regulatory agencies in sampling and test methods used for the detection of agricultural and biotechnology traits (GMOs) in the food chain, focusing primarily on grain. A report of this workshop can be found in the May- June CFW.

Sampling Seed
In the May/June issue of CFW, the same Biomarkers committee published "Sampling of Grain and Seed to Estimate the Adventitious Presence of Biotechnology-Derived Seeds in a Lot"  which was prepared by several committee members as a technical resource for managing feed and food supply chains with respect to adventitious presence.

Learn the Latest DON Recommendations in CFW
The Food Safety Committee, working with the North American Millers Association, brought together leading experts in the field to deliver an internationally significant report on the prevalence of Deoxynivalenol (DON, vomitoxin). They discussed the recommendations of maximum limits in cereal grains and provided information to the Codex Alimentarius committee on contaminants in foods. Read the report “DON Occurrence in Grains: A North American Perspective” published in the January/February issue of Cereal Foods World. An update on the issues will be discussed at the AACCI Annual Meeting, in a Hot Topic Session Monday October 19th.

  • AACCI members attended the Grains and Legumes Nutrition Council symposium presenting survey data and consumption trends and attitudes related to grains and legumes. The meeting, organized by new GLNC managing director Michelle Broom, was held in Sydney, Australia on April 30, 2015.

  • AMTC members encourage you to participate in a leading-edge forum held outside North America for the first time: “Sustainability, Genetics, and New Technologies,” a symposium to be held in Melbourne, Australia, on July 28, 2015. The meeting is being organized in partnership with ILSI’s Southeast Asia/Australia Region.
