A Multi-Glycomics Characterization of Food
Carbohydrates often represent the largest component of food. It is also the least structurally characterized and the most misunderstood. They can be small metabolites such as the simple sugars or large polymers with unique monosaccharide compositions, linkages, and even branching. For this reason, carbohydrates are often listed as various components in food databases such as simple sugars, fiber, starch, and even “dark matter”. The lack of structural details makes nutritional guidelines imprecise and clinical trials questionable. The lack of structures also limits the goal of personalizing nutrition. In this presentation, a multi-glycomic platform is described that first separates carbohydrates into alcohol-soluble and alcohol-insoluble fractions. The alcohol-soluble fractions are characterized with advanced chromatography and mass spectrometry (LC-MS) to provide free mono, di, and oligosaccharide analysis. The alcohol-insoluble fractions contain polysaccharides that are analyzed by three distinct LC-MS methods that yield the monosaccharide analysis with absolute quantitation, linkage analysis with extensive coverage (>100 linkages), and the polysaccharide quantitation. These methods combined provide the most extensive characterization of food carbohydrates. They are being used to characterize food in large feeding trials.

Cancellations MUST be made in writing and received by Cereals & Grains Association no later than September 13, 2024. Cancellations received by this date are subject to a $100 processing fee. Registration cancellations received after September 13, 2024, are NOT subject to a refund. Registration fees will be refunded the same way they were paid to Cereals & Grains Association. Attendee substitutions are permitted. If the original registrant is a member, the substitute must also be a member, become a member, or pay the difference between the member and nonmember rate. If Cereals & Grains cancels the event or associated ticketed events, Cereals & Grains Association is not liable for any charges, including nonrefundable hotel charges, airfares, or change penalties imposed by an airline. By registering for this event, you agree to the cancellation and refund terms and conditions.
Attendees from Outside the United States
If you require a visa to attend Chemistry, Quality, and Technology Conference do not wait until you receive notification that your abstract submission has been accepted before applying for a visa. If your abstract presents new information and follows the requirements and acceptance criteria, it will most likely be accepted or accepted with revisions in poster or oral format.
Customized visa invitation letters can only be issued to confirmed registrants including those who have paid the meeting registration fees), have submitted an abstract, or are otherwise presenting. When you register for the meeting, you will receive a confirmation email with a link to auto-generate a customized visa invitation letter. If you are unable to register early enough to begin the visa process and have submitted an abstract, please complete the
invitation letter request form. Invitation letters generated using the request form are identical to the letters created when registering, however they are manually created and may take up to 5 business days to be processed.
