The role of total carbohydrate intake and carbohydrate quality in long-term health remains controversial. Until recently, a low-fat, high-carbohydrate diet was recommended for prevention of chronic diseases, but current evidence suggests that high intake of refined carbohydrates and fructose-containing carbohydrates may be harmful. In addition, the glycemic index of carbohydrates may be important but current data are equivocal. This presentation will review current evidence for total carbohydrate intake and carbohydrate glycemic index as a risk factor for chronic disease and the implications of this research for dietary recommendations.
