USDA ARS Seed Vault - National Laboratory for Genetic Resources Preservation
This large facility is the only such operation in the country that does this for the United States. The facility has an impressive research component with a working gene bank where materials are constantly being processed and studied. Cereals and Grains Association participants will be especially interested in their processing procedures and how they evaluate the quality of seeds
The tour will explore the kinds of materials they are storing, why and how genetic resources are stored.
It will start with an overview of their mission along with a history of how the vault came to be. The group will then move upstairs to learn about the strategies in collection - how they go after certain things and the diversity they seek. From there you’ll move on to processing - specifically how they deal with processing, storage, (cold and Liquid nitrogen storage.) This is where you will go inside the vaults and experience the size and scope of the operation.

Plan to wear layers – cold vaults are cold (0 degrees)
Security requires a photo ID upon check in.
No purses, backpacks or heavy coats are permitted in the building; all personal belonging should stay in the bus.
Limagrain Cereal Seed Tour
Limagrain Cereal Seeds is dedicated to developing new, improved grain varieties bred expressly for our growers’ climates, soils and growing conditions. They have more than 75 distinct varieties in the marketplace – offered in 36 states and representing all major market classes of wheat and barley – and they are constantly researching, breeding, testing and releasing new varieties to meet the needs of growers.
During the Limagrain tour, you’ll get a general company and process overview and then tour the labs. (They’re hoping to be processing wheat quality council samples during our visit!)
The tour will focus on sharing where AACC methods are utilized; where future wheat is analyzed; and technologies that are applied…High Amylose and CoAXium wheat produced.
Troubadour Maltings
At Troubadour Maltings, you'll learn how they produce high quality malt for the brewing and distilling industry by building relationships with the growers of grains from throughout Colorado. By taking a craft approach to the malting process, they produce unique and flavorful malts that inspire their brewers and distillers.
New Belgium Brewery
During the VIP Behind the Scenes tour, we’ll break into small groups to make the most of the interactive guided tours through New Belgium’s impressive Analytical Chemistry, Microbiology and Sensory Labs and tour of the brewery.
Tours will include a beer tasting (21 years old and over). Additional beer can be purchased from the taproom for $5-7 each.
This final stop will provide ample time to relax and network with the participants in this tour and the Bread and Brew tour.

Whole Foods Market - Rocky Mountain Bakehouse
Whole Foods Market is a leading U.S. retailer of natural and organic foods uniquely positioned as America's Healthiest Grocery Store.
This tour will be a walkthrough of Whole Foods’ commissary bakery, which provides pizza dough, cakes, cookies, pastries, breads and rolls for local Whole Foods Stores. Attendees will tour the processing facility, including raw material storage and use, dough make-up, forming, dough fermentation, dough proofing, baking, and cooling. This will be a typical batch style process, where several knowledgeable bakers look at performance and consistency throughout the process.

Root Shoot Malting
Root Shoot’s family of 5th generation farmers grow, harvest and malt the finest grains to give brewers and distillers high-quality taste in every glass. Located on 1,500 acres of irrigated land in beautiful Loveland, Colorado they harvest alfalfa, rye, wheat, corn and barley.

Root Shoot Malting is in the unique position to control the entire malting process from seed variety and growth, to harvest and final kilning.
