Invertase Activity as a Measure of Malting Quality of Barley.

Soluble and insoluble invertase activities were measured on several six-row and two-row barleys after they had germinated. The activity of the soluble invertase was related to malting quality as indicated by conventional analyses, but the insoluble enzyme had no consistent relation to malt quality.
