Characterization of Triticale Protein.

Proteins from triticale endosperm and germ tissues were individually fractionated on the basis of solubility in several different solvents. Protein content and sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE) studies were done for each fraction. Gels were stained with Coomassie Brilliant Blue and Periodic Acid-Schiff (PAS) reagents. Molecular weights of the protein subunits were estimated in each fraction. Coomassie Brilliant Blue metachromasia was observed only in the storage proteins, which suggests that this behavior could be due to high proline content in these proteins.
