Introduction to Chapter

Knowledge of enzymes and how to use them in food processing has become significantly more sophisticated in the last decade or so. The more the conditions of production are understood, the better the solutions that can be conceived for solving specific production issues. While the range of problems associated with different processes and finished products is indeed very wide, there are some basic approaches to determining the fundamental issues and addressing them in a logical, progressive manner. Regardless of the particular industrial application, asking the right questions should help you to proceed to a solution.
